BBQ Chicken Pizza

I love to have girls nights. Whenever my friends from out of town come visit, usually instead of roaming the city we bust out the air mattress in the living room and watch movies and eat copious amounts of junk food.

When my girls from work come over, we usually sit around my kitchen island sucking down much needed booze and gossiping until we’re squealing. For the latest girls night, Julia and Caitlin brought their sweatpants, we were rocking pony tails and we just vegged out all night. After the kitchen counter was loaded with empty bottles, we needed sustenance. So we threw together this BBQ Chicken Pizza recipe Julia found on Pinterest.

Ingredients – Makes 2 pizzas

2-3 boneless skinless chicken breasts – shredded
1 Tbsp. salt
1/2 Tbsp. ground black pepper
1 Tbsp. chopped garlic
1 tsp. dried thyme
1 red onion – sliced
1 18 oz. bottle bbq sauce
8 oz. mozzarella cheese
2 pre-made pizza crusts
Fresh cilantro for garnish

Archer Farms Pizza Crust

I used an Archer Farms (ROOSTER BRAND!) pre-made pizza crust for this. It was crunchy and the perfect thickness. If you want to make your own, by all means go for it! But if you’re looking for a quicker meal, using pre-made crust never hurt anyone.

BBQ Chicken Pizza Ingredients

I did use red onion on this. However, I only kept it to half of the pizza because while the girls love the onion, I just haven’t gotten over hating it yet.

I put my chicken in a saucepan, topped it with the thyme, garlic, pepper and salt. Then, I added just enough water to just cover the chicken. I brought it to a boil and then covered the pan and simmered for 15 minutes.

There are some differing opinions about boiling chicken. Personally, I’m all for it. As long as you don’t overdo it, the chicken does end up fine for a shredded dish and not overly dry.

Use two forks to shred the chicken into bite size pieces.

Shredded BBQ Chicken

Pre-heat your oven to 400-degrees.

Now you’re ready to assemble!

Cover your crust evenly with sauce.

Spread the chicken shreds over the top of the sauce.

Bake for 10-12 minutes or until everything is warmed through and the cheese starts to brown.

Top with chopped cilantro and enjoy!

BBQ Chicken Pizza

I won’t lie, things got a little sloppy. We ended up watching about 47 Beyonce YouTube videos and screeching, “Look at her thighs, JUST LOOK AT HER THIGHS!” and I had BBQ sauce smeared all over my laptop. Yeah, we’re in our late 20’s and my laptop looked like some 2nd graders got a hold of it. The moral of the story: have napkins handy when you make this pizza, especially if Queen Bey is involved!
