Country Fried Steak

I don’t really even think this post needs a huge explanation. The title is Country Fried Steak. It’s steak. That’s been breaded. And then fried. ‘Nuff said? Yeah, I thought so!

Steak Ingredients:

2 lbs. round steak or cube steak cut into serving size pieces
2 eggs
2 cups flour
2 tsp. salt
2 tsp. black pepper
1 tsp. rosemary
1 tsp. thyme
1 tsp. savory
1 tsp. garlic powder
1 tsp. cayenne pepper
1/4 cup canola oil

Gravy Ingredients:

3 Tbsp. butter
3 Tbsp. flour
2 cups milk
2 tsp. salt
2 tsp. black pepper
1 tsp. rosemary
1 tsp. thyme
1 tsp. savory

I made my gravy first because the steak was quick to cook while the gravy was simmering.

First, melt the 3 Tbsp. butter in a large saucepan until it starts to foam then add your 3 Tbsp. flour.

Stir mixture together until smooth and it begins to foam again and brown slightly.

Add your 2 cups milk and whisk constantly until it thickens and the lumps disappear. Then, stir in your salt and pepper and spices and turn heat to low to keep warm while you make your steak.

Homemade Country Gravy

Heat the canola oil in a cast iron skillet over medium high heat.

For the steak, use your mallet to pound it 1/2 inch thick with the tenderizer side.

In a shallow dish, beat together 2 eggs. On a plate, mix together the flour and all of the spices.

Dip the steak first in the egg mixture, then the flour mixture, then back into the egg and back into the flour until fully coated.

Place all the steak in a single layer in the hot canola oil.

Let cook 3-4 minutes on each side until the breading is brown and crispy.

Once the steak is cooked thoroughly, top with the warm gravy. If your gravy has thickened, just add a bit more milk until it’s back at your desired consistency.

I served mine with herbed biscuits.

To make those, just add thyme, rosemary and savory (1 tsp. each) and 2 Tbsp. chopped, fresh garlic to your normal biscuit recipe. I use Bisquick, so I really just use the mix, milk and the herb/garlic mixture. Bake according to your recipe and serve as a side with any savory dishes!

Also, just a sidenote – it is really hard to type ‘country’ repeatedly when your name is Courtney. I didn’t get it on the first try even once.
