Grilled Mac and Cheese

I had to do it. I HAD to try mac in grilled cheese form. And quite frankly, you can thank me for it later. This was the ultimate so-so-bad but so-so-good recipe I have made to date. If you decide to make this, please do not skimp on the bread. Use a nice heavy bread like sourdough and I think using the bacon (or any type of meat really) kind of helped in making the flip a bit easier.

Before building your sandwich, get your meat prepared. I fried up some standard bacon, a little on the crispy side. I think smoked sausage would also make an excellent substitute for the bacon.

Place your bread on a non-stick skillet with butter that has been melted on medium heat. Then, top your bread with mac and cheese. I used my favorite homemade mac and cheese recipe for this.

Place the bacon on top and cook until bread is browned.

Top with the other piece of bread and flip sandwich. Be sure there is enough melted butter for the second side. If there isn’t, you can always set your half-cooked sandwich on a plate, melt more butter, and go!

Macaroni Grilled Cheese

Toast the other side until golden brown. Cut in half and feast!

Mac and Grilled Cheese

This grilled mac and cheese sandwich is not a joke, it’s filling. If you make a whole batch of mac and cheese, you WILL have leftovers. You can either eat them the traditional way, make another grilled cheese or use it to top a hot dog!
