Homemade Garlic Hummus

I think it goes without saying that I REALLY REALLY miss my friends in Chicago. I miss going out after work just for the heck of it, random get-togethers, and I really miss my book club. The ladies in my book club never shied away from making a full spread when it was their turn to host. All of them could whip up some mean snack recipes and one of my favorites was my friend Casey’s garlic hummus. It was absolute perfection from the consistency to the amount of garlic. I need to make a note to get her recipe from her, because I gave it a whirl and while mine did turn out delicious, it’s just not the same. I miss you Casey and your perfect hummus!

One thing I did differently was that I used sunflower butter instead of Tahini paste. First, I couldn’t find Tahini paste in my local grocery store and second, there was a sale and I got the sunflower butter for $2.99. If you’ve ever bought Tahini paste, you know that’s a better price!

Creamy Garlic Hummus Recipe:

1 can chickpeas – rinsed and drained
1 Tablespoons Tahini paste or sunflower butter
1/2 cup lemon juice
4-5 large garlic cloves
2-3 Tablespoons olive oil
1/4 cup water
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon smoked paprika

Add your lemon juice and sunflower butter to a blender.

*I used sunflower butter because I can’t find Tahini paste in West Virginia. I didn’t notice a difference in flavor or texture and it was actually a better price than Tahini paste and would be a great substitution for those with sesame allergies.

Blend until smooth and creamy.

Next, add your garlic and blend until combined.

Dump in your rinsed chickpeas and blend until smooth, adding olive oil as you go when it needs a little extra moisture. I ended up using about 3 Tablespoons olive oil.

This is where you should taste your hummus. Add salt 1/4 teaspoon at a time, blend and taste. I like mine with extra lemon and extra cayenne pepper. Give yours a taste and add or subtract where you see fit. Make this recipe your own!

Pour into a bowl and top with more olive oil and some smoked paprika.
