Kale Chips

Did you do a double take when you read that title? No, you did not read it wrong. I actually made something from a vegetable. And, even crazier, I loved it! These little chips are light and crispy and sort of reminded me of popcorn. I made mine a little unhealthier by seasoning them, but I still think a handful of these is way better than a handful of Doritos!

Kale Chips Recipe:

2 lbs. kale – washed and chopped
Olive oil cooking spray
Salt
Cayenne Pepper – optional
Garlic powder – optional

Pre-heat your oven to 275-degrees.

Wash and dry your kale thoroughly before you begin. I used a bag of pre-cut and pre-washed kale, super convenient!

Homemade Kale Chips

Line a baking sheet with wax paper and place the kale in an even layer on the sheet. Spray lightly with cooking spray and sprinkle salt, cayenne pepper and garlic powder evenly over the kale.

Baked Kale Chips

Bake for 30 minutes, tossing halfway through with a spatula so the kale is cooked completely.
