This is a mash up of a couple cookie recipes I’ve made recently. For Halloween, I dressed up as cookie monster so of course I had to treat the office to some cookies! I made chocolate chip cookies with Halloween candy bars inside them. Yes, they were as good as they sound. For our Christmas party, I made mint chocolate Oreo cookies. I had some leftover Mint Oreos and I decided they would be delicious stuck in the middle of a chocolate chip cookie.
2 sticks butter – softened
1 cup sugar
3/4 cup brown sugar
1 tbsp. vanilla
3-1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 bag chocolate chips
12 Mint Oreos
*Note – you could also use a pre-mixed chocolate chip cookie batter for this! It doesn’t require from-scratch cookies ;)
Pre-heat your oven to 350-degrees.
First, in one bowl, combine flour, salt and baking soda. In a separate bowl, use a hand mixer to blend the sugar and butter together until it becomes fluffy and light yellow.
Next, add your eggs and vanilla until it becomes a paste.
Then add your flour mixture a little at a time (I add mine in thirds), mixing to combine each time.
Towards the end, if you’re using a hand mixer, it might get a little tough to blend. I used my hands to combine the last bit of flour until a good dough was formed. Then add your chocolate chips, again I used my hands, until they are incorporated throughout your dough.
When you’re forming your cookies, you’ll want to measure your dough so they cook evenly. I used 1-1/2 tablespoon for each “side” of my cookie. Meaning, I scoop 1-1/2 tablespoon of dough, flatten it, then place the Oreo on that half.
Then take another 1-1/2 tablespoon of dough, flatten it, and place it on top of the Oreo (you end up using 3 Tbsp. of dough per cookie). Then use your hands/palms to cover the cookie completely. Be sure all seams are invisible before baking.
Place on a wax paper lined cookie sheet. Bake for 12 minutes or until golden brown, but still a little soft.
This is what happens if you don’t press your seams well enough, still edible though ;)
These cookies were a spontaneous New Years Day treat made purely out of boredom. I realized too late that I had some Reese’s Peanut Butter Cups in the freezer that would have worked well in these cookies. That’s the beauty of this recipe, you can really use any candy or cookie as the surprise filling!
