Pink Russian Cocktail

Valentine’s Day is 3 weeks away and that gives you plenty of time to start planning your menu! For the past 5 years or so, Ben and I buy huge steaks and then come up with some decadent pasta side to make along with them. Then we feast on our coffee table watching Netflix. Yes, we’ve been known to eat on our coffee table even on romantic holidays!

I’ve already started planning our meal and I think this year I might make these Creamy Garlic Parmesan Shells. We also usually buy a nice bottle of wine to go with our steaks, but this year I wanted to make a fun cocktail. I thought I’d stick with the decadent theme and make a creamy, fruity drink to sip while we’re cooking steaks together. That is our style of romance ;) So instead of a White Russian, which I am very fond of – I give you the Pink Russian!

Pink Russian Cocktail

2 oz vodka
1 oz mint simple syrup
1 oz strawberry liqueur
3 oz heavy cream
Strawberry and mint for garnish

If you’re still looking for a Valentine’s Day gift for her, I don’t know a lady in my life that wouldn’t like a new set of wine glasses! Here’s how to fill them up with a fruity cocktail!

To make the mint simple syrup, boil 1/2 cup of water and add it to 1/2 cup of white sugar. Then add a handful of mint leaves, about 3 stalks worth. I make mine in a mason jar so I can shake it up to dissolve, but be sure to wrap a towel around it while shaking so you don’t burn yourself! Pop that in the fridge until it’s completely cool.

To make the cocktail, I put everything in a shaker and stirred it with a spoon then poured over a full glass of ice and garnished!

I also got this Ampersand Couples Pillow for our bedroom because it’s one of the only rooms nearly finished in our house and decorating it calms me down when I’m about to throw power tools out the front window. Have I mentioned that I’m ready to be done renovating? Since it looks like we won’t be getting all our projects finished for Valentine’s Day gifts to each other this year, I think these glasses and adorable pillow are the perfect substitutes!
