Cheesy Chorizo Dip

I almost felt guilty sharing this recipe, because well it’s kind of unhealthy and totally indulgent. But, then I thought about it. Who doesn’t want to sit with a bowl of melted cheese and chorizo in front of them on game day? So, then I didn’t feel bad after all. It’s so cheesy and wonderful! Plus, it’s a snap to make. You could make it in little dishes or in one big skillet, just make sure the serving dish you use is oven-friendly and that it is also easy to lift. I ended up having to drain some of the chorizo grease out at the end of this, so plan accordingly!

Cheesy Chorizo Dip Recpie:

5 oz. monterey jack cheese – shredded
5 oz. white cheddar cheese – shredded
1/2 lb. chorizo (beef or pork) – browned and drained as best you can
1 garlic clove – minced
1/2 yellow onion – finely chopped
Tortilla chips

Start by preheating your oven to 350-degreees and shredding up all your cheese and setting aside.

While you’re shredding up a storm, you can get the chorizo cooking in a skillet (you can cook it in the oven safe skillet or a stove top skillet to transfer into the oven-safe dish later).

Once your chorizo has cooked, remove it from the pan and drain the grease as best as you can, leaving just a little in the pan to brown your onions and garlic. If you end up removing all the grease, just add a little oil to your pan to get them browned and translucent. Then, mix the chorizo, garlic and onions back together.

Start assembling your baking dish by adding a layer of the chorizo mixture to the bottom.

Then add a layer of both cheeses.

Then another layer of chorizo, then cheese. You get the picture! This will cook down in size when the cheese melts, so go ahead and pile it on.

Bake in an oven safe dish for 15-20 minutes. I had a small layer of grease on the top that I drained that off before serving.
