Valentine’s Day Fudgy Brownies

I have been craving SWEETS lately! Lucky for me, Valentine’s Day is almost here so I can bake and not feel like I need to justify myself. I can also go to Target on Saturday and get 75% off candy. I’m not even exaggerating when I say that will be the highlight of my entire week. Maybe even my entire month. So, that leaves just 3 days until I can fill my shopping basket with little chocolate goodies. Three days is a very long time. So I made brownies!

Fudgy Brownies Recipe:

1/2 cup butter
3 oz. unsweetened chocolate – roughly chopped
2 Tbsp. unsweetened cocoa powder
1 cup sugar
1 Tbsp. vanilla
2 eggs
3/4 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
1/8 cup vegetable oil

Preheat your oven to 350-degrees Fahrenheit.

Grease an 8×8 baking dish.

Rough chop your unsweetened chocolate, so it melts better.

Unsweetened Chocolate

Whisk together your flour, baking powder and salt in a small bowl and set aside.

In a medium saucepan, add your butter and unsweetened chocolate.

Melt your butter and unsweetened chocolate on low heat until smooth and melted.

Remove from heat and stir in your cocoa powder. Let sit until cool.

Stir in your sugar and vanilla until combined. It will look a little gritty, that is totally fine.

Add both eggs and mix until just combined.

Slowly stir your flour mixture into your chocolate mixture and stir until everything is incorporated.

Stir in your vegetable oil. This is definitely optional, but once when I was baking brownies from a box, I added way too much vegetable oil than directed. The brownies turned out gooey and fudgy and oh so rich. So, now I add it to my recipe!

Spread the batter onto your pre-greased baking dish and bake for 10 minutes or until a toothpick slides cleanly out. The batter will be thick, that’s a good thing!

For time purposes (I didn’t have any butter softened and I honestly hate waiting for that), I used a store bought frosting for these. Super simple and quick and they are ready to share. The easiest way to frost them is to put a dollop of frosting in the center, and use a knife to spread it out to the edges.
