Pinterest Recipe: Vanilla No Bake Cookies

The last weekend in July, my friend Jake had his annual pig roast/pool party that I have always looked forward to. I wasn’t able to go last year, so this year I made the trip back to Muskegon the weekend after I had just returned from my Michigan vacation, and yes it was worth it. Traveling back and forth from Michigan to Chicago is just something I’ve gotten used to in the summer. I miss my friends and Michigan is so perfect in the summer – it actually cools off at night!

Everyone brings a dish to pass at this party and since I was traveling a few hours the night before, I needed something I could make in advance and then would be really easy to transport without any extra prep. So naturally, I turned to Pinterest! I had this Vanilla No Bake Cookie recipe in my stash for quite some time, and this was the perfect time to make it.

While this was one of the easiest cookie recipes I’ve ever made, I remember saying out loud to myself, “This has got to be the most unhealthy thing I’ve ever made!” And I’m NOT known for cooking health-conscious meals.. Just look at all that butter and sugar:

But you know what they say, the most unhealthy foods tend to be the tastiest. And these were AMAZING!

Vanilla No Bake Pinterest Recipe

Vanilla No Bake Cookies Recipe:

2 cups sugar
3/4 cup (1-1/2 sticks) butter
2/3 cup milk
2 (1.5 oz.) boxes of vanilla pudding mix
3-1/2 cups quick cooking oats
1/2 tsp. vanilla extract

Melt the butter, milk, and sugar together over medium-high heat. Bring it to a boil and let it boil, stirring constantly, for 2 minutes. Remove from heat and stir in the oats, dry pudding mixes and vanilla extract. Once combined, let sit for 5 minutes. Next, scoop out cookie sized portions onto a wax/parchment lined cookie sheet. Let cool completely before serving. I put mine in the fridge to cool them quickly. Plus, these taste amazing cold!

Vanilla No Bake Cookie

I received a lot of compliments on these cookies. I think they were mostly gone before we even started eating the pig. While I don’t think they compare to the 800 lbs. of pulled pork I consumed, I would definitely make them again for any type of party. They are SUPER sweet, so I really recommend bringing them to a party or bringing them into the office to share. I don’t think I could eat more than 2 or 3 of them myself. Bottom line, this recipe is for sure a keeper and I wouldn’t change a thing about it!
