Chocolate Coconut Granola

Okay, I just need to rave for a second about my new favorite thing. This Silver Palate Thick & Rough Oatmeal is bomb. I can’t even explain to you how much I love these oats. Plus, I have been wanting to make my own granola lately and these little oats were absolutely perfect for my first attempt! I’ve been super into mixing granola this into my Greek yogurt or eating it with some super cold milk, cereal-style.

Chocolate Coconut Granola Recipe:

3 cups oats
1 cup chopped almonds
3/4 cup shredded coconut
2 Tbsp. brown sugar
1 Tbsp. cinnamon
1/2 tsp. salt
1/4 cup coconut oil (or vegetable oil)
1/2 cup honey
1 Tbsp. vanilla
1/2 cup chocolate chips
dried cranberries – optional

Pre-heat your oven to 250-degrees.

Combine oats, almonds, coconut, salt, brown sugar and cinnamon in a large bowl. Stir together.

Homemade Granola Ingredients

In a small cup or dish, mix your oil, honey and vanilla. If you do use coconut oil, it will be solid and you’ll want to bring it to 76-degrees to melt it.

I put mine in the microwave for 30 seconds and stirred it until it was clear liquid.

Then I added the honey and vanilla to it.

Pour your liquid mixture over your dry, oat mixture and stir until everything is evenly coated.

Homemade Granola

Spread onto a foil-lined, greased baking sheet (I sprayed mine with a little vegetable oil spray, just to make sure nothing stuck).

Oven Baked Granola

Bake for a total of 15 minutes, stirring every 15 minutes to get an evenly brown color.

Note that when you’re stirring, the oats are going to feel a little soft. Even when I pulled mine out after the full 45 minutes, they felt soft when I stirred them. They will harden and get crunchy, I promise! Let the granola sit and cool for about 10-20 minutes and then add your chocolate chips, mix them in and enjoy!
